Some food i’ve had/made recently in 🇪🇨 Ecuador 🇪🇨

During my stay in Ecuador, I had the wonderful opportunity to try and prepare several traditional dishes that highlight the rich and diverse flavors of the region. One of my favorites was the shrimp dish, which featured fresh seafood seasoned with local herbs and spices – a true taste of Ecuador’s coastal cuisine. I also cooked and enjoyed rice and beans, a staple in Ecuadorian meals, often accompanied by a hard-boiled egg and anzinilla tea, which is a unique herbal infusion adding warmth and comfort. Another exciting dish I tried was a Panamanian beef stew seasoned with peppers, which brought a savory and slightly spicy twist to my meals. Fried rice with plantains was another delicious fusion of flavors, blending sweet and savory elements, and showcasing the versatility of plantains in Latin American cooking. For dessert, strawberry shortcake provided a sweet and satisfying finish to my meals, balancing the savory flavors with fresh, juicy strawberries. These dishes not only satisfied my taste buds but also gave me insight into the culinary traditions of Ecuador and neighboring regions. Preparing and tasting these meals was a delightful way to connect with the culture and enjoy the authentic flavors.
