Ingredients
The Peaches
4 cups fresh peaches, peeled and sliced (about 4-5 large peaches) (Can peaches will work just as fine)
1/3 cup granulated sugar
1/2 Brown sugar
1 tablespoon lemon juice
1 teaspoon ground cinnamon
The Batter & Base (Pre made pie crust will work just fine)
I have my batter & base mix for the bottom and pie crust for the top.
1/2 cup (1 stick) unsalted butter
1 cup all-purpose flour
1 cup granulated sugar
1 tablespoon baking powder
1/4 teaspoon salt
1 cup whole milk
Instructions
1. Prep the Oven and Pan: Preheat your oven to 350°F (175°C). Place the stick of butter directly into a 9x13-inch baking dish and put the dish in the oven while it preheats to melt the butter. Keep an eye on it so it doesn't burn!
2. Macerate the Peaches: In a saucepan, combine the sliced peaches, 1/2 cup of sugar, lemon juice, and cinnamon. Bring to a simmer over medium heat and cook for about 5 minutes until the sugar is dissolved and the peaches start to release their juices. Remove from heat.
3. Mix the Batter: In a medium bowl, whisk together the flour, remaining 1 cup of sugar, baking powder, and salt. Pour in the milk and whisk just until combined (a few small lumps are perfectly fine).
4. Layer the Cobbler: Carefully remove the hot baking dish with the melted butter from the oven.
First: Pour the batter evenly directly over the melted butter. Do not stir.
Second: Spoon the peaches and all of their juices evenly over the batter. Do not stir. 5. Bake: Bake for 40 to 45 minutes, or until the top is golden brown and the edges are bubbling. The batter will magically rise up and around the peaches as it bakes.
