🌶️ Zesty Italian stuffed peppers

This was so good I wanted some stuffed peppers and decided to make some I didn’t make these the traditional way I wanted them to be vegetarian and somewhat light on your stomach

I can honestly say though I don’t have an exact recipe for this sadly otherwise I would share it I basically just seasoned to a taste of my liking.

I just had one of those moments where I went into the kitchen and threw this together

Items used:

creamy zesty Italian dressing

Smoked paprika

Pinch of salt

Veggie roast seasoning

Pepper

1 sweet onion

2 packs of impossible meat

Pack of bell peppers

Daiya cheese

Garlic powder

Italian seasoning

Mushrooms

Cook in the oven for 35 mins at 370 degrees

If you aren’t vegetarian just use regular ground beef and regular shredded cheese.

It's truly become a staple in my kitchen for those busy weeknights when I crave something satisfying yet light. Since you're looking for more ways to enjoy 'zesty sweet peppers,' I wanted to share a few extra tips and tricks I've discovered to make this dish even better and more versatile. First off, let's talk about those gorgeous bell peppers. I always gravitate towards the red, orange, and yellow bell peppers because they're naturally sweeter, which complements the zesty filling perfectly. When you're picking them out at the grocery store, look for peppers that are firm, shiny, and free of soft spots. They hold their shape so well during baking! To prep them, just slice them in half lengthwise and scoop out all the seeds and membranes. No need to par-boil them, especially if you like a bit of a bite, but if you prefer them really tender, a quick 5-minute blanch in boiling water can do the trick. Now, for that irresistible 'zesty' kick! While the creamy zesty Italian dressing does wonders, I sometimes like to amp it up even further. A squeeze of fresh lemon juice or a teaspoon of lemon zest mixed into the Impossible Ground Beef filling really brightens everything up. Don't forget a pinch of red pepper flakes if you like a little heat to balance the sweetness of the peppers. I've also found that adding a handful of fresh chopped parsley or basil at the end brings a wonderful herbaceous freshness. Remember those seasoning bottles I showed? Urban Accents Veggie Roaster and McCormick Life Sweet Like Smoky are fantastic for layering flavors and giving that plant-based meat a rich, savory depth. Speaking of the filling, if you want to experiment beyond Impossible Ground Beef, you absolutely can! I've had great success using a mix of cooked lentils and quinoa, seasoned with similar Italian spices. Or, for a heartier option, black beans and corn can be a fantastic addition, especially if you're aiming for a more Tex-Mex inspired zest. The key is to pre-cook your filling ingredients slightly before stuffing the peppers; this ensures everything is heated through and flavors are well-melded by the time the peppers are tender. To keep these 'somewhat light on your stomach,' as I mentioned, I like to load them up with extra mushrooms and onions, which add bulk and flavor without heavy calories. And for the cheese, Daiya cheese is my go-to for a dairy-free option, but any low-moisture, part-skim shredded mozzarella works great if you're not strictly dairy-free. Finally, what to serve these beauties with? As you saw in my pictures, a simple side of brown rice is perfect for soaking up all those delicious juices. A crisp green salad with a light vinaigrette also makes for a refreshing contrast. These stuffed peppers are also fantastic for meal prep! I often make a double batch and keep them in the fridge for quick lunches or dinners throughout the week. Just reheat in the oven or microwave, and you've got a wholesome, flavorful meal ready to go. Enjoy experimenting and making them your own!
