Feral Chicken & “Rice”

New Dinner Recipe for my picky eaters 😂

6 servings Dinner

1 lb of chicken breasts

1 can of cream of chicken soup

Desired amount of frozen broccoli

2 bags of Frozen Cauliflower Rice

3/4 ish cup heavy whipping cream

3/4 ish cup of chicken broth

Paprika

Garlic powder

Onion powder

Salt & pepper

Shredded cheese

Preheat oven to 375°

Cut the ickies off your chicken breasts

Dice your chicken into desired chunks

Season with garlic powder, onion powder, paprika, salt and pepper to taste (we follow the motto: if you ain’t sneezin, it ain’t seasoned)

Cook the chicken however you’d like (bake, air fry, sauté)

In a separate bowl, combine soup, heavy whipping cream and chicken broth & whisk until smooth

Throw the bags of cauliflower rice in the microwave for 3-4 minutes. Because it releases so much water, you will need to soak up as much water as possible with a towel.

In a baking dish, I used 5X9, layer with cauliflower rice, frozen broccoli, and chicken. Pour your creamy mixture over top. Make sure to get every part, especially the corners.

Top is shredded cheese of choosing (we used cheddar)

Cover with foil

Bake for 25 minutes

Remove the foil

Bake for another 20 minutes

Enjoy! 😉

One tip I learned when preparing this dish is to pay close attention to the moisture released by the frozen cauliflower rice. After microwaving it for just a few minutes, it can become quite watery, so draining and patting it dry with a towel helps prevent the casserole from becoming soggy. Seasoning the chicken generously is key to delivering big flavors — the combination of paprika, garlic powder, onion powder, salt, and pepper brings a fragrant, savory note that makes every bite delicious. I usually prefer sautéing the chicken to get a nice, golden crust before layering it into the casserole, but baking or air frying works well too depending on time and preference. Using cream of chicken soup mixed with heavy cream and chicken broth creates a rich sauce that coats every ingredient, making the casserole extra comforting and satisfying. Top it with shredded cheddar cheese before baking to add a delightful melty, golden crust. In my experience, this recipe is highly versatile: you can swap out the broccoli for other veggies such as green beans or spinach, or even add mushrooms for an extra layer of flavor. It also works well with other proteins like turkey or even tofu for those who prefer a plant-based option. This casserole is perfect for meal prepping — it reheats well and keeps its creamy texture, making it ideal for busy weeknights or feeding a family. Give it a try, especially if you want a healthy twist on traditional rice casseroles that sneaks in extra veggies without compromising on taste.
