Tomato Basil Soup Recipe for Dinner
I love homemade tomato soup. It can be paired with homemade croutons or grilled cheese or it can be made all by itself.
The ingredients are very simple:
Tomatoes
Onion
Garlic
Basil
Salt
Pepper
Oregano
Cream
I never had tomato soup as a comfort food growing up, but when I had it as an adult I could not turn back. It’s perfect on a cool rainy day like today. Try it for dinner and let me know exactly what you think!!!
You know, there's nothing quite like a warm bowl of homemade tomato basil soup on a chilly evening. I used to think it was complicated, but trust me, this recipe changed my mind! It's incredibly easy, and the fresh flavors really shine through. My secret to getting that deep, rich flavor starts with roasting the tomatoes, onion, and garlic. This step is a game-changer! Just toss them with a little olive oil, salt, and pepper, then pop them in the oven for about 20 minutes. The caramelization brings out so much sweetness and depth you just can't get from fresh alone. I usually use ripe Roma tomatoes, but any vine-ripened ones will do beautifully. Once everything's beautifully roasted and slightly softened, it's time to bring it all together. I transfer the roasted veggies into a pot, add some vegetable or chicken broth, and let it simmer for a bit to let those flavors meld. This is where the magic happens! Then, for that silky smooth texture, I use an immersion blender. If you don't have one, a regular blender works perfectly – just be careful when blending hot liquids, maybe start on PULSE and then go to HIGH speed until it's perfectly smooth. And of course, we can't forget the fresh basil! I add a generous handful towards the end; its vibrant aroma and peppery notes are what truly make this soup sing. Remember to wash before use to ensure no grit gets in! Sometimes, I even tear a few extra leaves to sprinkle on top right before serving. To finish it off, add cream. A splash of heavy cream or even coconut milk for a dairy-free option makes it incredibly luxurious and smooth. It balances the acidity of the tomatoes beautifully. Don't be shy with it – it adds a wonderful richness. And then, the best part: Enjoy! This soup is fantastic on its own, but to really elevate it, I have a few serving suggestions. A classic grilled cheese sandwich is a no-brainer for dipping. But I also love to top mine with homemade croutons, a swirl of pesto, or a sprinkle of freshly grated Parmesan cheese. For an extra kick, a pinch of red pepper flakes makes a lovely addition. You can also add some cooked pasta, like ditalini, to make it a heartier meal. It's truly a comforting dish that comes together so quickly, perfect for those busy weeknights when you still crave something homemade and delicious. Once you try this easy tomato basil soup, I bet it'll become a staple in your kitchen too!
