The tree buds are perilla leaves, and broad beans are substituted with thin peas 🫛, 💦

150 g peeled shrimp
Boiled bamboo shoots 150g
I substituted 20 tree buds with perilla leaves.
Broad beans 3 I substituted 🫛 thin peas.
30g flour I made it with rice flour.
20 g potato starch
50 ml of water
Salt to taste
Appropriate amount of frying oil

① Remove the back of the peeled shrimp and beat it with a kitchen knife to make it sticky.
② Cut the boiled bamboo shoots into 1cm cubes and chop the tree buds roughly.
③ Remove broad beans from the pod, remove the thin skin, and cut them in half.
④ Put 1, 2, 3 in a bowl, add 1 / 3 teaspoon salt, mix well, add flour, potato starch and water and mix well.
⑤ Put 4 in 170 degree frying oil with a spoon and fry for about 3 minutes.
⑥ Take out ⑤, sprinkle salt and serve in a bowl.

そら豆レシピを探している方に向けて、私が「かき揚げ」にした時のコツと、そら豆がない時の置き換えメモをまとめます。今回みたいに、そら豆が売っていない日でも“それっぽく”春っぽい仕上がりにできます。 ■そら豆を使う場合の下ごしらえ そら豆は「さやから出す→薄皮をむく」がひと手間ですが、ここをやると食感が一気に上品になります。薄皮は、黒い筋の反対側に浅く切り込みを入れてから指で押すとスルッと出やすいです。時間がない日は、熱湯で30秒ほどさっと湯通ししてから冷水に取ると薄皮がむきやすくなりました。 ■そら豆がない時の代用（私が試してよかった順） ・うすいえんどう豆：色が春っぽく、かき揚げにしても甘みが残って相性◎ ・冷凍グリーンピース：常備しやすい。解凍して水気を拭くと油はねしにくいです ・枝豆：食感がしっかり。香りは少し夏寄りになります どれも「水分を拭く」のがポイントで、衣がべちゃっとしにくくなります。 ■サクッと揚げるためのコツ（失敗しやすい所） ・具（むきえび、たけのこ、豆、大葉など）に先に塩を少し混ぜておくと味が決まりやすい ・粉は混ぜすぎない派もいますが、えびを叩いて粘りを出しているレシピなら“しっかり混ぜ”でもまとまりやすく、崩れにくかったです ・スプーンで落とす時は「薄めに広げず、厚みを出して」入れると散らばりにくい ・170℃で触らず我慢して、表面が固まってから返すと形がきれいでした ■味変：そら豆（または代用豆）に合う塩 私は塩だけでも十分でしたが、わさび塩はえびの甘みが引き立ってお気に入り。山椒塩はたけのこの香りが立って“大人っぽい”味になります。レモンを少し絞るのもさっぱりしておすすめです。 そら豆レシピ＝茹でるだけ、焼くだけになりがちですが、かき揚げにすると一気にごちそう感が出ました。春の野菜（たけのこ、大葉、豆）が揃う時期にぜひ試してみてください。
