Texas Style Lasagna

Instead of pasta you use corn tortillas!

Prep: 40 mins

Bake: 30 mins

Servings: 12

Ingredients:

1- 1/2 pounds ground beef

1 teaspoon seasoned salt

1 package taco seasoning

1 can diced tomatoes, undrained (14 ounces)

1 can of tomato sauce (15 ounces)

1 can chopped green chilies (4 ounces)

2 cups of cottage cheese 4%

2 large eggs, lightly beaten

12 corn tortillas (6 inches)

4 cups of shredded Monterey Jack cheese

Toppings- of your choice

Instructions:

1. In a large skillet, cook beef over medium heat until no longer pink, drain or use a paper towel remove grease. Add the salt, taco seasoning, tomatoes, tomato sauce and chilies. Reduce heat, simmer for 15-20 minutes. In a small bowl combine cottage cheese and eggs.

2. In a greased 13x9 baking dish, first layer the meat sauce, tortillas, cottage cheese and Monterey Jack cheese. Repeat.

3. Bake at 350 degrees for 30 minutes. Let it cool and dig in!

It still gives you that creamy, rich layer without being overly heavy. What I absolutely adore about this recipe is how those corn tortillas transform. They absorb all the delicious seasoned ground beef and tomato sauce flavors, creating a wonderfully tender and slightly chewy texture that’s completely different from traditional pasta. Plus, it makes assembling the distinct layers so much quicker and easier! The moment it comes out of the oven, with that golden-brown, melted cheese topping, you know you're in for a treat. It’s definitely a fun meal to make and even more fun to eat! One of the best things about cooking at home is making recipes your own, right? While this recipe is fantastic as is, I’ve played around with it a bit.
