My Mini Apple pie pastry cookies

These mini apple cinnamon pastries came out so soft, flaky, and full of warm sweet flavor definitely giving bakery vibes at home. The pastry dough baked up golden and buttery, and the apple filling inside is rich, cinnamon-spiced, and perfectly sweet. The lattice top makes them look extra pretty, and the drizzle on top just takes it over the top.

Ingredients:

• Pastry dough (store-bought or homemade)

• Apples (peeled & chopped)

• Brown sugar

• Cinnamon

• Butter

• Vanilla extract

Glaze:

• Powdered sugar

• Milk

• Caramel drizzle (optional but HIGHLY recommended 👀)

Instructions:

1. Preheat oven to 375°F

2. Cook apples with butter, brown sugar, cinnamon, and vanilla until soft

3. Roll out pastry dough and cut into small circles or squares

4. Add apple filling to the center

5. Cut strips of dough and create a lattice top

6. Bake for 20–25 minutes until golden brown

7. Let cool slightly, then drizzle glaze and caramel on top

My tip: don’t overfill them or they’ll spill over but a little bubbling out the sides makes them look even better 😩🔥 These are sweet, flaky, and perfect if you want something that feels like a real bakery treat at home.

... Read moreIf you’re looking to elevate your baking experience with mini apple cinnamon pastries, I highly recommend experimenting with the type of apples you use. Tart apples like Granny Smith provide a nice balance to the sweetness of the brown sugar and caramel drizzle, ensuring the filling isn’t overly sweet. On the other hand, sweeter apples like Fuji or Honeycrisp can lend more natural sweetness and juiciness, making the pastries extra tender inside. When making the pastry dough, if you have the time, preparing it homemade can add an extra buttery flavor and flakiness that store-bought dough may lack. However, for convenience, high-quality store-bought puff pastry or pie dough works well and saves time without compromising taste. Creating the lattice top is not only visually appealing but also allows steam to escape during baking, which helps the crust stay crisp and golden. For those unfamiliar with lattice patterns, you can simply cut thin strips of dough and weave them gently in an over-under pattern over the apple filling. To avoid spillover, it’s best to spoon in moderate fillings—enough to cover the center but leave room for the edges to seal. A minor bubbling out of filling during baking is actually desirable and adds a rustic charm to the pastry’s appearance. The glaze, made from powdered sugar and milk, can be customized by adding a splash of vanilla or a pinch of cinnamon for extra flavor. The caramel drizzle over the top gives a wonderful contrast of textures and sweetness—if you have caramel sauce on hand, it’s definitely worth the extra step. These mini apple cinnamon pastries are perfect for serving warm with a scoop of vanilla ice cream or a dollop of whipped cream, transforming a simple homemade dessert into an indulgent treat. Baking these at home not only fills your kitchen with inviting aromas but also lets you control the ingredients, making them a wholesome and customizable dessert option. Sharing these pastries with family and friends during fall or holiday gatherings can create memorable moments around delicious homemade treats that truly taste like they came from a bakery.
