After sharing my favorite 'How I cook my Haitian rice With beans' recipe (Diri ak Pwa), I wanted to dive deeper into why rice is so special in our culture and explore some other amazing Haitian rice dishes you might love. When people ask about 'Haitian food,' rice is often the first thing that comes to mind, and for good reason. My Diri ak Pwa, or rice and beans, is a staple, but it's just one star in a whole galaxy of 'Haitian rice' variations. Beyond the classic 'diri a legume' (rice and beans), there are so many 'different types of Haitian rice' to discover. Have you ever heard of Diri ak Djon Djon? It's a truly unique black rice dish made with dried black mushrooms, giving it an earthy, rich flavor and a distinct color. Then there's Diri Blan (white rice) often served with a variety of delicious sauces like Sos Pwa (bean sauce – different from Diri ak Pwa where beans are mixed in) or Sos Pwason (fish sauce). Each one offers a different experience, showcasing the incredible diversity within our cuisine. Cooking 'Haitan rice' perfectly is an art. The key is often in the base – sautéing the aromatics like garlic, onions, and peppers before adding the rice and liquids. And getting that perfect fluffy, separated grain? It takes practice, but my tip is always to use the right rice-to-water ratio and let it steam undisturbed. I’ve learned that over the years, and it makes all the difference. What do we pair these amazing rice dishes with? Everything! Diri ak Pwa is often served with a hearty stew like Poulet en Sauce (stewed chicken), Mayi Moulen, or even Griyo (fried pork).
