Cook with me: mini meatloaf 🍽️
Cooked these mini meatloaf loaves with sides at home 🍽️
I followed a simple recipe and made it my own a little. They came out really good, super filling and perfect for meal prep.
Ingredients I used:
* 1 lb lean ground beef
* 1 egg
* 1/2 cup Italian breadcrumbs
* 1/4 cup milk
* 1/2 cup ketchup
* Salt & pepper
Sauce:
* 1/2 cup ketchup
* 2 tbsp soy sauce
* 2 tbsp brown sugar
How I made it:
I mixed everything for the meatloaf together in a bowl (best part is using your hands so it combines well), then shaped them into small loaves and placed them on a lined baking tray. I baked them at 375°F for about 20 minutes first. After that, I added the sauce on top and baked them again until fully cooked and glazed.
They came out really soft, flavorful, and perfect for a simple homemade meal.
Have you ever tried making mini meatloafs like this? 🍽️
Making mini meatloaf at home has been a game-changer for my weekly meal prep routine. These small, individual loaves are not only adorable but also cook faster than a traditional meatloaf, which is great when you're short on time. One tip I learned is to use your hands to mix the meat mixture thoroughly—it helps combine all ingredients evenly, ensuring every bite is flavorful. The sauce topping with ketchup, soy sauce, and brown sugar adds a delicious glazed finish that caramelizes in the oven, giving the mini loaves an irresistible sweet and savory taste. I like to bake them at 375°F initially before adding the glaze, which keeps the meat moist and tender. For variations, you can include finely chopped vegetables like onions, bell peppers, or carrots inside the meat mixture to add more nutrition and texture. If you want a healthier twist, substitute some of the ground beef with ground turkey or chicken. Mini meatloaf loaves are perfect for pairing with classic sides such as mashed potatoes, steamed vegetables, or even a fresh salad for a balanced meal. They also reheat well, making them ideal for lunchboxes or quick dinners throughout the week. Overall, mini meatloaf is a comforting, crowd-pleasing dish that’s easy to customize and perfect for any home cook looking to simplify meal prep without sacrificing taste.
