Lasagna soup is a fantastic comfort food that combines all the hearty flavors of traditional lasagna into a warm, easy-to-make soup. This particular recipe uses ground chicken as a lighter alternative to ground beef, making it a healthier option without sacrificing taste. The foundation of the soup includes sautéed onions, garlic, and optionally carrots, which add natural sweetness and depth. Tomato sauce and chicken broth create the rich, flavorful base, while Italian seasoning brings an herby, aromatic touch that complements the meat and vegetables perfectly. The choice of noodles is flexible, but smaller shapes like elbow macaroni or mini shells work best to give that authentic pasta feel in each spoonful. A unique step here is melting ricotta and mozzarella cheese directly into the hot broth before stirring it all back into the soup. This method ensures a creamy texture and a gooey cheese experience similar to the melted cheese layers in traditional lasagna. You can adjust the amount of cheese based on your preference for creaminess. For a vegetarian twist, you could omit the ground chicken and incorporate mushrooms or lentils instead. Additionally, leftovers can be refrigerated for a couple of days and taste even better after the flavors meld together. This lasagna soup is perfect for busy weeknights or when you want comfort food that doesn't require hours in the kitchen. It pairs well with garlic bread or a simple green salad to round out the meal. With simple ingredients and straightforward steps, making a cozy bowl of lasagna soup at home is both satisfying and delicious.
