Making the epis fresh at home ensures you get that authentic taste, with the perfect blend of green onions, bell peppers, garlic, and parsley. When baking, I recommend using fresh, high-quality snapper, as its mild sweetness complements the zesty vegetables like yellow squash and red bell peppers. The addition of sliced green limes adds a subtle citrus aroma that brightens the entire dish. One tip I've found helpful is to marinate the snapper in the epis seasoning for at least an hour before baking. This allows the spices and herbs to penetrate deeply, making the fish tender and flavorful throughout. Also, arranging the vegetables around the fish not only ensures even cooking but allows the juices and seasoning to mingle, creating a natural sauce. For the hottest flavor lovers, adding fresh hot pepper into the epis or as a garnish adds a delightful kick without overpowering the dish. Pairing this bake with traditional sides such as white rice, rice and beans, or fried plantains completes the meal, balancing the spicy and savory notes. This dish is not only delicious but also healthy, packed with fresh vegetables and baked rather than fried, making it a perfect choice for those looking to enjoy Caribbean flavors while maintaining a nutritious diet.
