The mushrooms are tender, the asparagus is crisp, and the quinoa adds a filling feeling (use less as a side dish, more as a meal), while the pine nuts add a nutty flavor. This combination is absolutely amazing! Remember to use high heat when stir-frying the mushrooms!

(Serves 3)
300g asparagus
250g oyster mushrooms
5 cloves garlic
1 tablespoon pine nuts
1/2 cup cooked quinoa, or to taste
Olive oil to taste
Light soy sauce to taste
Salt to taste
A pinch of black pepper

1. Remove the roots of the asparagus, scrape off the skin, and cut into diagonal sections. Slice the oyster mushrooms. Mince the garlic. -
2. It's best to use a frying pan with a large bottom area to quickly evaporate the excess water from the mushrooms. Heat the pan and pour in olive oil. Once hot, add the shiitake mushrooms and stir-fry until golden brown. Feel free to pause and fry briefly.
