Slice the chicken breast horizontally into two thin slices. Poke holes on both sides with a toothpick. Combine scallion slices, shredded ginger, black pepper, sea salt, lemon juice, light soy sauce, oyster sauce, and cornstarch. Cover with plastic wrap and marinate overnight. Heat a pan with olive oil over medium heat and sear on each side for 2 minutes.
