EASY & *Moist* Banana Bread 🍌

I know… nobody likes the word “moist.” 😂 But there’s just no better way to describe this banana bread. It’s ridiculously moist, soft, and stays that way for days.

And before you side-eye the mayonnaise… you won’t taste it. It just works.

Ingredients

* 3 medium ripe bananas, mashed (about 1 cup)

* ½ cup mayonnaise

* 1 egg, room temperature

* 1½ cups all-purpose flour

* ¾ cup granulated sugar

* 1 teaspoon baking soda

* ½ teaspoon salt

* ½ cup chopped pecans (optional)

Directions

1. Preheat oven to 350°F and grease an 8x4-inch loaf pan.

2. Mash the bananas and mix with the mayonnaise and egg.

3. In another bowl, combine the flour, sugar, baking soda, salt, and pecans.

4. Stir the wet ingredients into the dry ingredients until just combined. The batter will be thick. Don’t overmix.

5. Pour into the prepared loaf pan and bake for 60-70 minutes, or until a toothpick comes out clean.

6. Let cool before slicing… if you can wait that long.
