Cottage Cheese & Blueberries Muffins🫐
Ingredients
• 1 cup cottage cheese
• 2 eggs
• ½ cup milk - any kind
• ¼ cup maple syrup (adjust to taste)
• 1 tsp vanilla extract
• 1½ cups all-purpose flour
• 2 tsp baking powder
• ½ tsp cinnamon
• Pinch of salt
• ½ cup blueberries
Instructions
1. Blend wet ingredients: In a blender or food processor, blend cottage cheese, eggs, milk, maple syrup, and vanilla until smooth.
2. Mix dry ingredients: In a large bowl, whisk together flour, baking powder, cinnamon, and salt.
3. Combine: Pour the blended wet mixture into the dry ingredients. Stir gently until just combined (do not overmix).
4. Add blueberries.
5. Bake: Grease or line a muffin tin, fill each cup about ¾ full, and bake at 350°F (175°C) for 18-22 minutes, until a toothpick comes out clean.
6. Cool: Let muffins cool in the pan for 5 minutes, then transfer.
