Korean cuisine offers a variety of refreshing side dishes known as banchan, and cucumber salad is among the favorites. This salad is not only light and vibrant but also incorporates flavors that excite the palate, thanks to the combination of soy sauce, sesame oil, and Gochugaru. Gochugaru, a type of Korean red pepper flakes, adds a subtle heat and enhances the overall flavor profile of the dish. With the addition of honey, you strike the perfect balance between sweet and savory. To elevate this salad, consider adding other ingredients such as chopped garlic for an aromatic punch or a splash of rice vinegar for tanginess. This salad is particularly great for summertime dining due to its refreshing quality. It pairs well with grilled meats or can stand alone as a refreshing snack. Allowing the salad to sit overnight not only amplifies the flavors but gives it a delightful texture. Consider making a larger batch to share at gatherings or to enjoy throughout the week!
