Pumpkin topped cupcake

I’ve been frosting the bottom of my cupcakes with a sprinkle base and I don’t see myself stopping anytime soon. I’m not sure that the sprinkle is the right choice for the cupcake, but I still love how he came out.

I used a 2A piping tip to make the round base as well as the pumpkin on top!

Forget store-bought mixes; making these from scratch is surprisingly simple and so rewarding. First, let's talk about the cupcake base itself. You want a moist, flavorful crumb that's not too dense. Here’s what I use for about 12 delicious cupcakes: Ingredients: 1 ½ cups all-purpose flour 1 teaspoon baking powder ½ teaspoon baking soda 1 teaspoon ground cinnamon ½ teaspoon ground ginger ¼ teaspoon ground nutmeg ¼ teaspoon ground cloves (or just 1 ½ teaspoons pumpkin pie spice blend) ½ teaspoon salt ½ cup (1 stick) unsalted butter, softened ¾ cup granulated sugar ¼ cup packed light brown sugar 2 large eggs 1 teaspoon vanilla extract ½ cup pumpkin puree (not pumpkin pie filling) ¼ cup buttermilk (or milk with ½ tsp lemon juice/vinegar, let sit 5 mins) Instructions: Preheat & Prep: Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners. Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, cloves (or pumpkin pie spice), and salt. Set aside. Cream Wet Ingredients: In a large bowl, using an electric mixer, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes). Add Eggs & Vanilla: Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract. Mix in Pumpkin & Buttermilk: Add the pumpkin puree and buttermilk to the wet ingredients and mix until just combined. Don't worry if it looks a little curdled at this stage; it will smooth out. Combine Wet & Dry: Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix! Overmixing can lead to tough cupcakes. Fill Liners: Divide the batter evenly among the prepared muffin liners, filling each about two-thirds full. Bake: Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a cupcake comes out clean. Allow to cool in the pan for a few minutes before transferring to a wire rack to cool completely. Now, for the fun part – decorating! Once your cupcakes are completely cool, you can get creative. The original idea of a Pumpkin topped Cupcake is brilliant and totally achievable. I love using a 2A piping tip for a smooth, round base and then, with the same tip, creating that adorable little pumpkin on top. You can even add a tiny green sprinkle for the stem! For the Frosting (Cream Cheese Frosting is my favorite for pumpkin!): 8 oz cream cheese, softened ½ cup (1 stick) unsalted butter, softened 3-4 cups powdered sugar, sifted 1 teaspoon vanilla extract Pinch of salt Beat cream cheese and butter until smooth. Gradually add powdered sugar, vanilla, and salt. Beat until light and fluffy. If you want to make the pumpkin top, tint a small portion of frosting orange and a tiny bit green. Other Pumpkin Cupcake Ideas to try: Cinnamon Sugar Swirl: Before baking, swirl a mixture of cinnamon and sugar into the batter for an extra spice kick. Caramel Drizzle: After frosting, drizzle with a warm caramel sauce for an indulgent treat. Maple Cream Cheese Frosting: Substitute some of the vanilla in your cream cheese frosting with maple extract for a different fall flavor. Pecan Topping: Toast some chopped pecans and sprinkle them on top of your frosting for a delightful crunch. Spice it up: Add a tiny dash of cayenne pepper to your batter for a subtle, unexpected warmth. Remember, baking is all about having fun and experimenting.
