1. Preheat your oven, and prepare your brownie mix according to package directions, adding in peppermint extract. Bake your brownies for 12-14 minutes and allow to cool for 10 minutes.
2. Mix warm brownies with 2 tablespoons of the chocolate Frosting. Scoop mixture with a cookie scoop and refrigerate for 10 minutes.
3. Once chilled, roll the brownie bites in the palm of your hand to make a rounded ball. Melt your white chocolate and dip the cake pop sticks and place a stick in each brownie bite.

If you've ever wondered how to use a standard box of brownie mix in a fun and inventive way, these peppermint brownie pops are a fantastic option to try. Beyond just mixing and baking, the process of rolling the brownies with frosting and dipping them into white chocolate adds an extra layer of texture and flavor that elevates the classic brownie. One tip that worked well for me was to make sure the brownies have cooled down sufficiently before mixing in the frosting—this helps achieve the right consistency for rolling into perfect balls without being too sticky or crumbly. Also, chilling the brownie-frosting mixture before shaping helps keep the pops firm. For the peppermint twist, the addition of peppermint extract adds a nice holiday vibe, and topping with crushed candy canes not only enhances the festive look but also gives a pleasant crunch. These pops make a great dessert dip alternative; you can pair them with complementary dips like marshmallow fluff or chocolate ganache for parties. Beyond the peppermint flavor, you can experiment by adding chopped nuts like pecans for texture or even switching to different extracts for varied tastes. If you have leftover or overbaked brownies, repurposing them into pops like this is a clever way to enjoy them without waste. Plus, these treats are easy to serve and great for kids and adults alike. I’ve found that using quality white chocolate for the coating really makes the final product shine both in presentation and flavor. Overall, brownie pops are a fun and festive twist on the traditional brownie, especially during the holiday season, and are sure to impress your family and friends!
