The Creamiest Veggie Linguine 🍝

This creamy, herby, flavor-packed dish is everything a cozy bowl of pasta should be. Save this for when you need a little comfort!

Ingredients:

* 1 pack linguine

* 2 cups beef broth

* 1 head broccoli, chopped into bite-sized pieces

* 1 cup cherry tomatoes, halved

* 1 white onion, diced

* 1 can cannellini beans, drained & rinsed

* 3 cloves garlic, minced

* 1 bunch parsley, minced (save some for garnish)

* 1 cup heavy whipping cream

* 1 round Boursin cheese

* ½ cup freshly grated parmesan

* ¼ cup pine nuts

* 2 tbsp pesto

* ½ tsp paprika

* Fresh cracked black pepper & salt to taste

* * Red pepper flakes (optional for garnish)

Instructions:

1️⃣ Prep the veggies: Chop broccoli, halve cherry tomatoes, dice onion, mince garlic, and parsley.

2️⃣ Sauté aromatics: In a large pan, heat olive oil and add onions, garlic, broccoli, and tomatoes. Let them soften and develop flavor.

3️⃣ Build the sauce: Pour in beef broth and bring to a simmer. Add paprika, cracked pepper, and salt. Stir in heavy cream, beans, and Boursin cheese until smooth.

4️⃣ Blend it out: Use a hand mixer or blend the sauce until creamy. Stir in pesto and parmesan.

5️⃣ Cook the pasta: In a separate pot, boil salted water and cook linguine according to package instructions. Drain and set aside.

6️⃣ Toast the pine nuts: In a separate pan, lightly fry pine nuts in olive oil until golden and fragrant.

7️⃣ Finish the dish: Add drained pasta to the sauce, gently tossing to coat.

8️⃣ Plate it up: Twirl pasta into a bowl, top with extra sauce, garnish with parsley, pine nuts, and red pepper flakes.
