Classic Charlotte/ No bake Berry Charlotte Cake
Ingredients 🍳
— 2 packages (about 400g) ladyfingers (Savoiardi)
— 1/2 cup milk (for dipping)
— 16 oz (450g) mascarpone cheese or cream cheese, softened
— 2 cups heavy whipping cream, cold
— 3/4 cup powdered sugar
— 1 tsp vanilla extract
— 1.5 cups fresh mixed berries (strawberries and raspberries), chopped
- 1cup white milk chocolate
- 70ml whipping cream, warm
— 1/4 cup berry coulis or seedless raspberry jam (for the heart swirls)
Instructions 👨🍳
1. Line the bottom of a 9-inch springform pan with parchment paper.
2. Briefly dip the flat side of the ladyfingers into the milk (do not soak them) and arrange them vertically around the inside edge of the pan, sugar-side facing out.
3. Line the bottom of the pan with more dipped ladyfingers, trimming them if necessary to fit snugly.
4. In a large mixing bowl, beat the mascarpone cheese, powdered sugar, and vanilla extract until smooth and creamy.
5. In a separate bowl, whip the cold heavy cream until stiff peaks form. Gently fold the whipped cream into the mascarpone mixture until fully combined.
6. Pour the filling into the prepared ladyfinger crust and smooth the top evenly with a spatula.
7. Sprinkle some berry sauce and layer the raspberries and strawberry and cover with prepared cream. Repeat for one more layer.
8. Now warm the whipping cream and pour over chocolate and let it sit for 5min and mix without lumps forming a smooth sauce.
9. Pour the chocolate sauce over the cake.
10. To create the heart design, place small drops of berry coulis or jam in a circle on top of the cake. Run a toothpick or skewer continuously through the center of the drops to form connected hearts.
11. Cover gently and refrigerate for at least 6 hours, or preferably overnight, to allow the cake to set completely.
12. Carefully remove the springform ring, garnish the center with fresh whole berries and mint, slice, and serve chilled.
