1. 5-6 boiled eggs, halved

3. curry leaves,
4. 1 ½ tbsp crushed ginger & garlic
5. 2 tsp black pepper powder
6. 2 medium onions, thinly sliced
7. 1 tbsp Kashmiri chili powder
8. 2 tsp coriander powder
9. 2 tomatoes,chopped
10. 1/4 cup tomato purée
11. 1/4 cup water
12. Salt, to taste
13. chopped coriander to finish
Instructions
1. Heat oil in a pan. Add curry leaves, ginger, and garlic. Sauté until aromatic.
2. Add black pepper powder, crushed black pepper. Cook for a minute until fragrant.
3. Add sliced onions and cook until softened and starting to brown.
4. Stir in red chili powder and coriander powder. Add chopped tomatoes, tomato purée, and water. Let it cook until the masala thickens and oil separates.
5. Place the halved boiled eggs in the masala and simmer on medium heat for a couple of minutes, allowing the flavors to meld.
6. Finish with chopped curry leaves and serve hot!
