Ep-3 Biryanis from India - Ambur Biryani
Ambur Biryani
1. Heat 3 tbsp oil in a kadhai, add 8 cloves, 1 cinnamon stick and 6-8 green cardamom
2. Add 3 sliced onions, and cook till light golden brown
3. Add 3 tbsp garlic and 3 tbsp ginger paste to this and cook till the rawness goes away.
4. Add 1/4 cup chopped mint and coriander, along with 2 sliced tomatoes
5. Soak 10-12 Kashmiri red chillis in water, and grind to make a paste, add this to the masala and mix for 2-3 mins
6. Add 1/2 cup yogurt, along with salt as per taste, 1 tsp garam masala
7. Add 1 kg chicken, add 1 cup water along with juice of 2 lemons
8. cook the chicken till it’s perfectly cooked
9. For the rice, soak 2 cup jeera samba rice for 4hr, next boil it in water till it’s 90% cooked
10. Once the rice is cooked, add it in the chicken and delicately mix it together
11. Cover with a foil and let it cook on dum for 15-20 mins
12. Serve hot with onion raita and enjoy .
