Baked Potato w/ Chili
One of my favorite comfort foods during the colder months is a baked potato topped with a rich, homemade chili. What I love about this recipe is how versatile and easy it is to prepare, making it a go-to option when I'm craving something hearty and satisfying. From my experience, using ground turkey instead of beef helps reduce the fat content without sacrificing flavor, especially when combined with the bold spices like chili powder and cumin. I always make sure to rinse the kidney beans thoroughly before adding them, which results in a cleaner taste and helps balance the chili's texture. A trick I’ve found useful is to cook the onions and garlic until they’re just translucent to deepen the chili’s flavor without overpowering the other ingredients. Letting the chili simmer for around 20 minutes really allows the spices and tomatoes to meld perfectly. When assembling, splitting the baked potato open wide to generously spoon on the chili makes for a perfect bite each time.
