Tomato Soup 🫶
Tomato Soup is one of my favorite comfort meals since I was a little kid. Over the years, I’ve tried different recipes and think I have finally gotten it to taste just the way I want it. If you try it, let me know!
Tomato Soup Recipe
Ingredients: 4/5lbs of tomatoes (I used heirlooms), 1 large white onion, 12 cloves of garlic, salt, pepper, Italian seasoning, paprika, beef broth, whole milk or cream, olive oil.
Directions:
-preheat oven to 450°
-cut tomatoes into quarters, onion in to 8ths, garlic cloves into halves or smaller if needed to cook faster
-add all veggies on a cooking sheet
-drizzle veggies with olive oil, salt, pepper, paprika, and Italian seasoning, place in the oven for 35-40 mins
-remove from oven, put all veggies and any juice on cooking sheet into a pot or blender. If in a pot use an immersion hand blender
-put on low heat while you do the rest
-add about 1/4 cup broth, 1/4-1/2 cup whole milk/cream depending on how much you like
ladded a teaspoon of sugar at the end, helped the flavor /acidity
Topped with a small bit of sour cream and shredded mozzeralla
