As someone who loves experimenting with salads, this Crispy Chicken Peach Caprese Salad quickly became a favorite in my kitchen. The combination of crispy, well-seasoned chicken with the natural sweetness of fresh peach adds an unexpected yet delightful twist to the classic Caprese salad. What I found especially helpful was using an air fryer to get that perfect golden crunch on the chicken while keeping it juicy inside. The blend of corn starch and flour in the breading ensures the chicken coating stays crisp, which is key when combined with the softer textures of mozzarella and arugula. For the salad itself, I like to use a generous amount of fresh basil—it really brightens up the flavors and complements the sweetness of the peaches and cherry tomatoes. Adding a handful of peppery arugula adds a nice bite and freshness. The homemade balsamic dressing is simple yet makes a huge difference. Mixing extra virgin olive oil with balsamic vinegar and Italian spices brings all the ingredients together with that perfect balance of acidity and richness. I encourage trying variations like swapping mozzarella for burrata for an even creamier texture, or adding toasted pine nuts for some crunch. This recipe works well as a light lunch or an impressive side dish for dinner parties. Overall, this salad is a wonderful way to enjoy seasonal produce with the satisfying crunch of crispy chicken. It’s healthy, flavorful, and visually appealing—plus, it’s easy to prepare and looks like a dish you’d order at a fancy restaurant, all from your own kitchen.
