🛒 Ingredientes
Para el relleno: • 2 a 3 mangos maduros
• 1 sobre de grenetina (gelatina sin sabor; prepárala siguiendo las instrucciones del paquete)
• Hojas de menta fresca
• Azúcar al gusto (opcional)
Para la mousse: • 1 taza de nata para montar (heavy cream)
• ¼ de queso crema
• Pulpa de mango
• Leche condensada al gusto
• Un chorrito de vainilla
Para la cobertura: • Chocolate blanco
• Manteca de cacao (partes iguales)
• Colorantes liposolubles amarillo, naranja y verde
👩🍳 Procedimiento
1-Prepara la grenetina siguiendo las instrucciones del paquete y reserva.
2-Corta un mango en cubitos y licúa el otro hasta obtener una pulpa.
3-En un recipiente, mezcla los cubitos de mango con la pulpa de mango, la grenetina ya preparada y las hojas de menta fresca. Si lo consideras necesario, agrega azúcar al gusto y mezcla bien.
4-Vierte la mezcla en moldes pequeños de silicón y llévalos al congelador hasta que estén completamente firmes.
5-Para preparar la mousse, coloca en un recipiente la nata para montar, el queso crema, la pulpa de mango, la leche condensada y la vainilla. Bate todo junto hasta obtener una mezcla cremosa y homogénea.
6-Coloca una capa de mousse en el molde con forma de mango, añade en el centro el relleno congelado y termina de cubrir con más mousse hasta llenar el molde por completo.
7-Lleva nuevamente al congelador hasta que esté completamente firme. El tiempo dependerá de tu congelador, pero asegúrate de que esté totalmente congelado antes de desmoldarlo.
8-Derrite partes iguales de chocolate blanco y manteca de cacao. Agrega un poco de colorante amarillo para darle un tono base y cubre el mango con esta mezcla para crear una fina capa crujiente.
