Canning carrots plain and glazed!

Canning carrots might seem like a chore at first – believe me, I’ve been there! But there's truly nothing quite like opening a jar of your own home-canned carrots, whether they're plain and ready for a hearty stew or sweetly glazed for a quick and comforting side dish. My family absolutely adores having them on hand, and honestly, the convenience makes all the peeling and chopping worth it. For me, canning is all about that satisfying feeling of self-sufficiency. Knowing I have healthy, delicious vegetables stocked in my pantry, ready to go whenever I need them, is incredibly reassuring. It also means I can enjoy the best of the harvest long after the growing season is over. Plus, these shelf-stable carrots are a huge time-saver on busy weeknights! When I'm getting ready to can, I always start with fresh, firm carrots. After a good scrub, it's time for peeling and washing your carrots. I find a good swivel peeler makes this task much less tedious. Once they're sparkling clean, I get to chopping them into coins. Uniform size is key here for even cooking in the jar. I usually aim for about half an inch thick, but you can do sticks if you prefer – just make sure they're consistent. Now for the fun part: filling your jars! I make sure my jars are clean and hot. For the plain carrots, I simply pack them into the jars, leaving about an inch of headspace. Then, I add about a half teaspoon of salt to each pint jar (or a full teaspoon for a quart jar). After that, I fill the rest with water, ensuring the carrots are fully submerged. The vinegar is crucial here – I add a tablespoon per quart jar (or half for a pint). This little bit of acidity helps ensure safety and quality during the canning process. For the glazed carrots, oh, they're a real treat! After packing the carrots into the jars, I prepare my glazing liquid. I use orange juice as the base, usually about a third of a cup per pint jar. Then I stir in a couple tablespoons of maple syrup for that lovely sweetness, and just a little salt to balance it out. I gently heat this mixture to dissolve the salt and syrup, then pour it over the carrots in the jars, again leaving that essential inch of headspace. Once all the jars are filled, it's time to wipe your rims and flats thoroughly to ensure a good seal. Then I place the lids and bands on fingertip-tight. The final step is the water bath for two hours for quart jars (or 75 minutes for pints). This processing time is vital for safety, making sure your delicious carrots are properly preserved and truly shelf-stable carrots for months to come. After the processing, I carefully remove the jars and let them cool undisturbed on a towel for 12-24 hours. The sound of those lids popping is always music to my ears! These plain canned carrots are wonderful in soups, stews, or simply reheated with a pat of butter and herbs. The glazed ones are fantastic as a quick side for dinner or even a holiday meal. It's so rewarding to have these homemade goodies at my fingertips, all thanks to a little effort in the kitchen!
