Mahi Mahi!

Mahi Mahi with Cilantro Lime Cream Sauce

Ingredients:

• 4-5 mahi-mahi filets

• 2 tbsp flour

• 1 tsp garlic powder

• 1 tsp paprika

• 1 tsp salt

• ½ tsp pepper

• 2 tbsp olive oil, divided

• 1 tbsp butter

• 3 cloves garlic, minced

• 1¼ cups chicken bone broth

• 1 tbsp cornstarch

• ½ cup heavy cream

• 1 tbsp lime juice

• 1 tsp dried thyme

• 1 tsp dried cilantro

• Fresh cilantro (for garnish)

Instructions:

1. Prepare the fish: In a bowl, mix the flour, garlic powder, paprika, salt, and pepper. Pat the mahi-mahi filets dry, then coat them in the seasoning mixture.

2. Sear the fish: Heat 1 tbsp olive oil and 1 tbsp butter in a cast-iron skillet over medium heat. Add the seasoned mahi-mahi filets and sear for about 4 minutes on one side, then flip and cook for another 2-4 minutes, until cooked through. Remove the fish from the pan and set aside.

3. Make the sauce: In the same skillet, add the minced garlic and cook until fragrant, about 30 seconds. Mix the cornstarch with the chicken bone broth, then add it to the pan, stirring constantly to avoid lumps.

4. Add cream and seasonings: Once the broth has thickened slightly, stir in the heavy cream, lime juice, dried cilantro, and thyme. Let the sauce simmer for 2-3 minutes until it’s well combined and thickened.

5. Combine and garnish: Return the mahi-mahi filets to the skillet, spooning the sauce over the top. Let the fish warm through for about 1-2 minutes. Garnish with fresh cilantro and serve immediately.

... Read moreAfter making this amazing Mahi Mahi with Cilantro Lime Cream Sauce, I just had to share a few extra tips and tricks I've learned to make it even better, especially if you're looking to perfect your fish dishes at home! Mastering the Mahi Mahi: Tips for a Perfect Fillet First off, choosing your fish wisely makes all the difference. Look for mahi-mahi fillets that are firm to the touch and have a fresh, mild ocean smell – never overly fishy. Once you have your beautiful fillets, proper preparation is key. I've found that patting the mahi-mahi dry thoroughly with paper towels before seasoning is crucial. This helps create that gorgeous, crispy crust when searing. Now, for seasoning the mahi mahi: don't be shy! A generous hand with the salt, pepper, garlic powder, and paprika, along with a light dusting of flour, makes all the difference. This coating not only adds flavor but also helps protect the delicate fish while it cooks and contributes to that desirable golden-brown exterior. The pan sear on both sides is absolutely essential for locking in moisture and flavor. Seriously, getting that perfect golden-brown crust without overcooking is the secret to tender, flaky mahi-mahi. Make sure your skillet is hot enough, and once it's beautifully seared and cooked through, remember to remove from pan and set aside to rest briefly while you finish the sauce. Elevating Your Cilantro Lime Cream Sauce This sauce is truly the star of the show and makes this dish feel so luxurious! While the recipe calls for chicken bone broth, I've sometimes used vegetable broth or even a splash of dry white wine for a slightly different depth of flavor – experiment to find what you love. When you add the garlic, cook it until it's fragrant, but be careful not to burn it, as that can turn bitter. The heavy cream adds such a luxurious, velvety texture, and that essential squeeze of fresh lime juice brightens everything up, cutting through the richness beautifully. It's truly a balance of flavors. For the herbs, while dried thyme and cilantro are convenient, if you have fresh cilantro on hand, definitely use it for garnish – it just elevates the presentation and freshness to another level. I also love to add a tiny pinch of red pepper flakes to the sauce for a subtle kick, especially if I'm feeling a little adventurous. Just a little bit gives it an extra layer of warmth without making it overtly spicy. Perfect Pairings and Variations to Try Wondering what to serve alongside this delightful dish? I find fluffy jasmine rice or a light quinoa salad soaks up the extra sauce beautifully, making for a complete and satisfying meal. Roasted asparagus, green beans, or a simple side salad with a light vinaigrette also complement the rich flavors of the mahi-mahi and sauce without overpowering them. For a touch of freshness, a simple corn salsa can be a wonderful addition. If you're looking to mix things up, consider adding some finely diced bell peppers or cherry tomatoes to the sauce for extra color and sweetness. Or, for a spicier kick, a dash of your favorite hot sauce or a finely minced jalapeño can be a fantastic addition to the cream sauce itself. This recipe is surprisingly versatile! I've even flaked leftover mahi-mahi and mixed it into tacos the next day with any remaining sauce – absolutely delicious and a great way to repurpose a gourmet meal. I hope these extra tips help you create an even more memorable meal. Cooking fish at home can seem intimidating, but with a few pointers, you'll be making restaurant-quality dishes in no time. Enjoy!
