First sourdough 🙂‍↔️🍞

2024/9/9 Edited to

... Read moreEmbarking on your sourdough journey can feel a bit daunting at first, with all the talk of starters, bulk fermentation, and special equipment like Dutch ovens. But trust me, as a beginner, I learned that it's totally achievable and incredibly rewarding! My first attempt, as you saw in the images, proved that with a few key steps and some patience, you can bake a beautiful loaf. First things first, let's talk about the heart of sourdough: the starter. Many wonder, 'can you make sourdough without a starter?' The short answer for true sourdough is no, you need a live starter. You can get one from a friend, buy one online, or even make your own from scratch. If you're building one, you'll be feeding it daily, often seeing it become active and bubbly around 'day 7 sourdough starter'. An active starter is crucial—it should float in water and have lots of bubbles. When it comes to 'mixing sourdough starter' into your dough, make sure it's at its peak activity for best results. My recipe used a basic ratio: 80G STARTER, 250G WATER, and 350G BREAD FLOUR. Getting your hands in the dough is part of the fun! After mixing, you'll start the process of KNEADing and developing gluten. Instead of vigorous kneading, many sourdough recipes, including mine, rely on 'stretch and folds' and 'coil folds'. These gentle techniques build strength in the dough over time, usually with rests in between, like the 45 MIN REST I took. These folds are essential for developing that airy, open crumb we all love. Don't worry about 'skipping bulk fermentation sourdough' as a beginner; embracing the full process, including these rests and folds, is key to understanding the dough's development. One of the biggest questions I had was, 'do you need a Dutch oven for sourdough?' My experience proves you don't! The OCR notes, '*I DONT HAVE A DUTCH OVEN*', and I still got a great result. Dutch ovens create a steamy environment crucial for a good crust and oven spring. But you can mimic this. Instead, try baking your loaf on a preheated baking steel or a heavy baking sheet. To create steam, place a tray of hot water on the bottom rack of your oven during the initial baking phase. Just be careful when opening the oven! Make sure to preheat your oven to 400 DEGREES before putting your shaped dough in for 40 MIN. After all the resting and 'SHAPE'ing, it can be nerve-wracking to put your creation in the oven. Remember, sourdough baking is a journey, and every loaf teaches you something new. My 'TRIED TO DO DESIGNS' didn't turn out perfect, but the taste was amazing. Don't be afraid to experiment and find what works for you. These 'sourdough tips for beginners' should help you feel more confident in tackling your first few loaves. Happy baking!

Sourdough starter : for beginners
TIP #1 : For your first measurement, weigh the flour using a kitchen scale so you can get an idea of how the mixture should feel. Do not weigh the measuring cup! It should be like a thick paste, like peanut butter. If you need to add a little more water to incorporate the flour, that is OK too!
