Broccoli Sunrise Bites

Ingredients:

•6 large eggs

•1/2 medium onion, diced

•1 small tomato, diced

•1/2 cup broccoli, chopped

•1/4 cup low-fat cheese, shredded

•1 tsp olive oil

•Salt and pepper

Instructions:

1) Preheat oven to 375°F (190°C). Lightly grease a muffin tin with olive oil or nonstick spray.

2) Steam or sauté the broccoli for 2-3 minutes until tender.

3) Heat olive oil in a pan and sauté onions and tomatoes until softened (3-4 minutes). Add the cooked broccoli to the mixture. Let cool slightly.

4) Whisk eggs in a bowl. Stir in the veggies, cheese, salt, and pepper.

5) Pour the mixture evenly into the muffin tin, filling each cup about 3/4 full.

6) Bake for 20-25 minutes or until set and golden on top.

7) Store in the refrigerator in an airtight container for up to 5 days.

They look so good! I have this recipe where I use broccoli and beans with soy sauce and garlic and this reminded me of it I don’t know why lol but hope you have a great day will definitely have to try this out
