Honey Oat Sourdough Ingredients:

Sourdough Starter: 2 Cups

• Warm Milk: 1/2 Cup

• Honey: 3 Tablespoons

• Melted Butter: 2 Tablespoons

• Rolled Oats: 1 Cup (plus extra for topping)

• Bread Flour: 3 Cups

• Table Salt: 1 1/2 Teaspoons

• Warm Water: 1–3 Tablespoons (only if dough stays floury)

Instructions:

1) Mix 1 cup of oats with 1/2 cup of warm milk. Let this sit for 20 minutes. This prevents the oats from stealing moisture from your flour.

2) In a large bowl, whisk the starter, honey, and melted butter. Add the oat/milk soaker and stir. Add the flour and salt. Mix until a shaggy mass forms. If you still see dry flour after 2 minutes of mixing, add warm water 1 tablespoon at a time until the dry bits disappear. Let the dough rest for 30 minutes.

3) Perform 3 sets of stretch and folds with 30 minutes of rest between each set. How: Wet your hand, grab one side of the dough, pull it up high, and fold it into the center. Rotate the bowl and repeat 4 times per set.

4) Gently pat the dough into a rectangle (about 9 inches wide). Roll it tightly away from you into a log. Pinch the seam shut.

5) Wipe the top of your dough log with a damp paper towel or cloth. Sprinkle dry oats over the damp surface and press gently. Place the log in a greased loaf pan, seam-side down.

6) Warm Rise: Cover and place in a warm spot (like a microwave with a cup of hot water) for 4–6 hours. Overnight Option: Leave in the microwave for 1 hour, then cover tightly and put in the fridge for 8–12 hours. Take it out 2 hours before baking to finish rising.

Goal: The dough must reach 1 inch above the rim of the pan.

7) Preheat oven to 375°F. Bake for 40–45 minutes (Internal temp: 200°F).

8) Swipe a mixture of 1 tbsp melted butter and 1 tbsp honey over the top for a uniform, professional shine.
