Ingredients:
- 1 cup avocado oil 🫒
- 1 large egg (room temperature) 🥚
- 1 tsp Dijon mustard
- 1 tsp apple cider vinegar or white vinegar
- 1/2 tsp garlic powder 🧄
- Salt & pepper to taste 🧂
Instructions:
1. In a tall container, combine the egg, mustard, vinegar, garlic powder, and a pinch of salt.
2. Using an immersion blender, blend on high while slowly drizzling in the avocado oil until thick and creamy.
3. Season with salt and pepper to taste.

Homemade avocado oil mayonnaise can be stored in the refrigerator for about 1 to 2 weeks. To maximize freshness, keep it in an airtight container.
