🖤 My Cheese Board ❤️

As a foodie, I had so much fun creating this cheeseboard for my friend’s birthday. I wanted something refined, elegant, and luxurious — so I built the board around three distinctive French cheeses:

• 3-Year Aged Comté

• La Noix d’Argental

• Bethmale Chèvre by Hervé Mons

Each cheese brought its own character, and together they created a beautifully balanced, sophisticated board that felt as indulgent as it looked, but here is more detail,

🧀 1. 3-Year Aged Comté

• Profile: Deeply nutty, crystalline, and complex — a true expression of Jura craftsmanship. The long aging brings out roasted hazelnut, brown butter, and subtle caramel notes.

• Texture: Firm and slightly crumbly with those delightful tyrosine crystals that crunch softly.

• Pairings: Pair with toasted walnuts, dried apricots, and a drizzle of chestnut honey. Wine-wise, a Vin Jaune, Chardonnay from Burgundy, or Champagne Blanc de Blancs works beautifully.

• Vibe: The “old soul” of your board — elegant, intellectual, with quiet depth.

🧀 2. La Noix d’Argental

• Profile: Lusciously creamy, buttery, and mild with just a touch of sweetness and nuttiness. It’s a double-cream cow’s milk cheese from Lyon, washed in walnut liqueur — hence the “noix.”

• Texture: Silky and spreadable, with a bloomy rind.

• Pairings: Fresh pears or figs, crusty baguette, and a light white wine (like a Viognier or Beaujolais Blanc).

• Vibe: The “seductress” of the trio — smooth, decadent, and sensual. It rounds out the intensity of the Comté with softness.

🧀 3. Herve Mons Bethmale Chèvre

• Profile: A rustic, semi-hard goat’s milk cheese from the Pyrenees. Earthy and subtly tangy, with notes of hay, cellar, and wildflowers. Herve Mons’ affinage (aging) adds a refined depth.

• Texture: Supple yet slightly springy, with a natural rind that adds a whisper of mushroom and barnyard character.

• Pairings: Drizzle of acacia honey, a few almonds, and a light red like Pinot Noir or a Chinon (Cabernet Franc).

• Vibe: The “free spirit” — pastoral, expressive, and slightly wild, giving the board character and contrast.

Now for the board I added two spreads — crème de marron and a spiced pumpkin mustarda — to introduce sweet, earthy, and warm-spiced notes that echo the cheeses’ richness and lift the goat and cow milks

To add crunch, chew, and bright fruit accents, I included candied pecans, candied walnuts, candied orange slices, fresh figs, dried peaches, and dried pears. These provide textural contrast and multiple sweetness levels that pair beautifully with the Comté’s nuttiness, the lactic creaminess of La Noix d’Argental, and the rustic tang of the Bethmale chèvre

For the charcuterie I chose saucisson sec and smoked coppa — both savory and slightly cured — to add smoky, savory umami that balances the sweeter spreads and fruit while giving guests a classic meat-and-cheese mouthfeel.

✨ Why each addition works ✨

• Crème de marron — plush, chestnut sweetness; spreads easily on baguette and contrasts salty, matured cheeses

• Pumpkin spicy mustarda — bright, tangy, and warmly spiced; cuts through creaminess and refreshes the palate between bites

• Candied pecans & walnuts — crunchy, caramelized, and buttery; echo the nutty notes in the Comté and add a luxurious texture

• Fresh figs — soft, juicy, subtly floral; ideal with goat cheese and creamy cheese for a fresh, elegant bite

• Candied orange slices — concentrated citrus and chew; provide a bright, bitter-sweet counterpoint to triple-cream and aged cheeses

• Dried peaches & pears — chewy, concentrated fruit sweetness; pair especially well with lactic and washed-rind textures

• Saucisson sec — dry, slightly peppered; traditional French cured meat that plays well with all three cheeses

• Smoked coppa — silky, smoky, and fatty; complements the board’s richer elements and adds depth
