Oreo & White Chocolate Chips Red Velvet Cookies

Ingredients
½ cup unsalted butter, softened
½ cup granulated sugar
½ cup brown sugar
1 egg + 1 egg yolk
1 tsp vanilla extract
1 tbsp buttermilk (or milk + ½ tsp vinegar)
1½ tbsp red food coloring
1½ cups all-purpose flour
½ tsp baking soda
¼ tsp salt
2 tbsp unsweetened cocoa powder
¾ cup white chocolate chips
8 Oreo cookies, crushed (plus extra for topping)
Instructions
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream butter and sugars for 2–3 minutes until fluffy.
Add egg, egg yolk, vanilla, buttermilk, and red food coloring. Mix until smooth.
In a separate bowl, whisk together flour, cocoa powder, baking soda, and salt.
Gradually add dry ingredients to wet, mixing until just combined.
Fold in white chocolate chips and crushed Oreos.
Scoop dough (about 3 tbsp per cookie) onto baking sheets, spacing 2 inches apart.
Top each cookie with extra Oreo bits and white chocolate chips.
Bake for 10–12 minutes, until edges are set but centers are soft.
Cool on the pan for 5 minutes, then transfer to a wire rack.
