PB & J Bread 🥜🍓
A twist to a classic childhood (or even adulthood 🫢) favorite, this PB & J bread is one to add to your “to-make” list 🥜🍓 Since I used powdered PB & stevia (& does require oil asides from nonstick oil spray), this bread is on the lower side when it comes to fat & refined sugar content!

Okay, full disclosure: I'm obsessed with classic PB&J flavors, but sometimes I want a treat that feels a little lighter. That's why I absolutely fell in love with this healthy PB & J bread recipe! It brings back all those childhood memories without the sugar rush. Seriously, who knew you could make something this good and still feel great about it? What makes this recipe stand out is its smart ingredient swaps. Instead of traditional peanut butter, we're using powdered peanut butter. This genius ingredient gives you all the rich peanut flavor with significantly less fat. And for sweetness, granulated stevia steps in for refined sugar. It's amazing how well it works, letting the natural sweetness of the frozen strawberries shine through in those beautiful strawberry layers. We also use unsweetened almond milk for a lighter liquid base, contributing to a lower overall fat content. Making quick bread like this is super forgiving, but a few tips can make all the difference. First, don't overmix your batter! Overmixing develops gluten too much, leading to a tough bread. Just mix until everything is just combined. Also, make sure your oven is preheated properly to 350 degrees F – this helps the bread rise nicely and ensures an even bake. And for that perfect swirl of peanut butter and strawberry layers, don't be afraid to fold gently. You want distinct ribbons of light brown dough and vibrant red strawberry puree, not a fully blended purple batter! Using an oil-sprayed pan helps prevent sticking and ensures a beautiful release of your finished PB & J Bread. While the classic peanut butter and strawberry combination is unbeatable, don't hesitate to get creative! You could swap out the frozen strawberries for raspberries, blueberries, or even a mixed berry puree. Imagine a chocolate chip and PB&J bread? Yes, please! Just fold in about 1/2 cup of mini chocolate chips with your dry ingredients. For a protein boost, you could even add a scoop of vanilla protein powder to your dry mix (you might need a tiny bit more unsweetened almond milk or water to adjust consistency). You can also experiment with different flours; a blend of whole wheat and all-purpose can add more fiber. Once your beautiful PB & J Bread comes out of the oven, resist the urge to slice it immediately! Let it cool in the pan for about 10-15 minutes before transferring it to a wire rack. This helps it set and prevents it from falling apart. I love a slice with my morning coffee or as an afternoon pick-me-up. It's also fantastic lightly toasted, perhaps with a thin smear of extra peanut butter or a dollop of yogurt. Store any leftovers in an airtight container at room temperature for up to 3 days, or in the fridge for up to a week. You can even slice and freeze individual portions for a quick grab-and-go treat! This recipe truly transforms a childhood favorite into a guilt-free indulgence. Give it a try, and I bet it'll become a staple in your kitchen too!
