Life in an unfinished barndo definitely has its challenges, but it also creates some of the most unique and cherished memories! One thing that’s been a total game-changer for us, especially while our main kitchen is being completed, is our Blackstone griddle. It’s not just for classic diner food – I’ve discovered it’s amazing for whipping up healthy, delicious dinners, often with the most incredible view of our property. When you're constantly on the go or dealing with a construction zone, healthy eating can sometimes fall by the wayside. But with the Blackstone, it's surprisingly easy to keep things nutritious and flavorful. My secret? Focusing on lean proteins and lots of fresh veggies. Think "sheet pan" style meals, but on the griddle! For example, one of my go-to healthy Blackstone dinner recipes involves marinated chicken or shrimp tossed with bell peppers, onions, zucchini, and cherry tomatoes. A little olive oil, some seasoning, and it cooks up perfectly in minutes, getting that lovely griddle char. We often enjoy these meals right outside, truly "Cooking Dinner With a View" from our unfinished barndo. Another favorite is a healthy breakfast-for-dinner spread. Scrambled eggs or egg whites, turkey bacon, and a big pile of sautéed spinach and mushrooms. You can even griddle some sweet potato hash or diced potatoes for extra fiber and nutrients. It’s quick, satisfying, and you don’t need a fancy kitchen to make it happen. The beauty of the Blackstone is how much surface area you have, allowing you to cook all components of a meal at once, reducing cleanup and speeding up dinner. To keep Blackstone meals healthy, I always recommend using just enough oil to prevent sticking – a good quality avocado or olive oil spray works wonders. Don't be afraid to load up on non-starchy vegetables; they cook fast and add so much flavor and volume without a lot of calories. Try asparagus, broccoli florets, or even thinly sliced carrots. Fish, like salmon or cod, also cooks beautifully on the griddle. For salmon, I often cook it skin-side down first for a crispy finish, or create a simple foil packet with lemon slices and fresh herbs to steam it gently for a tender, flaky result. You can also cook lean ground turkey or beef for healthy stir-fries or lettuce wraps, minimizing added fats by draining any excess. Another great tip for healthy Blackstone griddle cooking is to prep your ingredients beforehand. Chop all your veggies, marinate your proteins, and have your sauces ready. This makes the actual cooking process incredibly fast and stress-free. It’s incredible how versatile this outdoor cooking setup is, making meal times enjoyable even amidst our homebuilding project. We've even grilled fruit for a healthier dessert – think peaches or pineapple slices with a sprinkle of cinnamon! Embracing this country living, we've found that these simple, healthy Blackstone meals not only fuel us through our homebuilding journey but also become a central part of our daily routine. It's a reminder that even in the midst of chaos, you can create delicious, nourishing food and truly make the best memories, all while enjoying the fresh air and the progress on your home.
