Ingredients

• 1 lb chorizo (pork or beef)

• 3 medium potatoes, diced small

• 1 onion, diced

• 12 eggs (from your 18 total)

• ½ cup milk

• ½ cup cottage cheese (blended smooth or whisked in)

• 1½ cups shredded cheese

• 10–12 flour tortillas (large)

• Salt + pepper

• Optional: salsa or hot sauce for serving

Instructions

1. Preheat oven to 375°F. Spread diced potatoes + onion on a baking sheet. Drizzle lightly with oil, season with salt + pepper, and roast for 20–25 minutes until golden and tender.

2. While that’s roasting, cook chorizo in a skillet until browned and crumbly. Drain excess grease if needed.

3. In a large bowl, whisk together eggs, milk, cottage cheese, salt, and pepper. Scramble in a skillet until just set.

4. Stir in roasted potatoes/onions and cooked chorizo. Mix well.

5. Warm tortillas. Fill each with egg mixture and shredded cheese. Roll into burritos.

6. Wrap each burrito in foil or parchment. Store in fridge (3–4 days) or freezer (2–3 months).

Reheating:

• Microwave: 2–3 minutes from frozen.

• Air fryer: 350°F for 8–10 minutes wrapped in foil.

Ham & Egg Muffin Bites (makes 12)

Ingredients

• 6 eggs (from your total 18)

• ¼ cup milk

• ¼ cup cottage cheese (blended smooth)

• ½ cup diced ham

• ½ cup shredded cheese

• ½ bell pepper, diced (optional)

• Salt + pepper

Instructions

1. Preheat oven to 375°F. Grease or line a 12-cup muffin tin.

2. Whisk together eggs, milk, cottage cheese, salt, and pepper.

3. Stir in diced ham, shredded cheese, and optional peppers.

4. Pour evenly into muffin cups (fill about ¾ full).

5. Bake 18–20 minutes until set in the center.

6. Let cool before removing from tin.

Storage:

• Fridge: up to 4 days in airtight container.

• Freezer: up to 2 months (wrap individually).

Reheating:

• Microwave: 30–45 seconds per muffin.
