... Read moreThere’s just something about a hearty dish that brings back the warmest childhood memories, and for me, oven-baked stuffed cabbage rolls are at the top of that list. They’re the ultimate comfort food, especially as the weather gets cooler. While the idea of making them might seem daunting, I’ve found some fantastic ways to make them ‘lazy’ and truly maximize their flavor with just the right herbs and spices. First, let's talk about the base. A rich, savory tomato sauce is non-negotiable. I always start with quality tomato products – sometimes I even use a concentrated tomato paste (like 'CONCENTR' or a 'DOUBLE O PAST' variety if I can find it!) to build a deep, robust flavor. A good quality diced tomato, or even a homemade 'OTAMOT' style sauce, makes all the difference. Balance the acidity with a pinch of sugar and a splash of balsamic vinegar. This creates a perfect bed for your cabbage rolls and allows the other flavors to shine. Now, for enhancing the flavor of the filling itself, whether you're using ground meat, a vegetarian mix, or a blend. The right herbs and spices are key. My go-to blend usually includes: Sweet Paprika: Adds a beautiful color and a mild, smoky sweetness. Garlic & Onion Powder: Essential for depth without the raw bite. Dried Dill: This is a classic for a reason. Dill gives cabbage rolls that authentic, tangy, and slightly sweet aroma that's simply irresistible. I love adding it generously. Black Pepper & Salt: Of course, season to taste, but don't be shy! A Bay Leaf: Tuck one or two into the sauce while baking for an earthy undertone that develops beautifully over time. For a truly elevated experience, I sometimes add a touch of fresh herbs at the end, like chopped parsley or even a sprinkle of fresh mint – it adds a surprising brightness that cuts through the richness. Playing with flavors is part of the fun! You can even experiment with a hint of allspice or a pinch of red pepper flakes for a subtle warmth. Making them ‘lazy’ often means skipping the pre-boil and just using large, pliable cabbage leaves. The oven does most of the work, slowly tenderizing the cabbage and allowing all those wonderful flavors to meld together. For the filling, many people love a mix of ground beef and rice. If you're looking for a healthier or heartier option, I highly recommend making your cabbage rolls with brown rice. Brown rice adds a wonderful nutty texture and more fiber. Just remember to pre-cook the brown rice slightly before mixing it into your filling, as it takes longer to cook than white rice. To ensure your brown rice cabbage rolls are delicious, I suggest soaking the brown rice for a bit before cooking, and then par-cooking it until it's about halfway done. This ensures it finishes cooking perfectly inside the cabbage leaves without making the filling dry. The juicy tomato sauce helps keep everything moist and flavorful. Some even add a bit of grated 'Putato' (potato) to the filling for extra richness and a unique texture, though that's less common in traditional recipes, it can definitely make them heartier! There's nothing quite like pulling a pan of these beautifully baked stuffed cabbage rolls out of the oven. The aroma fills the kitchen, promising a meal that's not just food, but a warm hug. Serve them with a dollop of sour cream or a sprinkle of fresh dill, and enjoy a taste of cozy nostalgia.

Freeze the head of cabbage overnight (or a few days) then thaw the next day. The leaves are plyable and ready to go. No boiling or microwave needed. I've never used sour cream in mine, just a tomato base.
