* ¼ cup dry white cooking wine
* 1 tbsp all-purpose flour
* ½–1 cup beef broth (or water)
* Salt and black pepper to taste

* 2 large sweet potatoes, peeled and cubed (the sweet potatoes I got were so big make sure is enough for your dish, about 3lb.
* 4 tbsp butter
* ¼–½ cup heavy whipping cream
* ½ cup grated Parmesan Romano cheese
* 2 egg yolk
* 1 tsp parsley flakes
* Salt and black pepper to taste

Step 1 – Cook the Potatoes

Drain well.
Mash with:
* Butter
* Heavy cream

* Parsley flakes
Mix in one egg yolk until smooth and creamy. Set aside.
