🥩Father’s Day Dinner🥗

Instead of eating out with the crowd of people, seared some ribeyes, a quick summer salad, and airfried some potato wedges. Definitely not as pricey too.

Here’s my quick summer salad recipe:

Ingredients:

• 2 large apples (Granny Smith or Honeycrisp)

• 6 cups mixed greens (spinach, arugula, or your favorite salad mix)

• 1/2 cup crumbled feta cheese

• 1/4 cup dried cranberries

• 1/4 cup sliced almonds or walnuts

• 1/2 small red onion, thinly sliced

Dressing:

• 1/4 cup olive oil

• 2 tablespoons apple cider vinegar

• 1 tablespoon honey

• 1 teaspoon Dijon mustard

• Salt and pepper to taste

Instructions:

1. Prepare the Apples: Core and thinly slice the apples. For extra crunch and flavor, you can leave the skin on. Soak in salt water to reduce oxidation.

2. Combine Salad Ingredients: In a large bowl, mix the sliced apples, mixed greens, feta cheese, dried cranberries, sliced almonds or walnuts, and red onion.

3. Make the Dressing: In a small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until well combined.

4. Toss the Salad: Drizzle the dressing over the salad and toss gently to coat all ingredients evenly.

5. Serve.

Tips:

• For added freshness, you can add a squeeze of lemon juice.

• You can serve with some sliced protein as a lunch salad.
