HOMEMADE VEGGIE CHICKEN NUGGETS
Tired of the preservatives and additives tainting our grocery stores? Me too! Feel like you never have enough time in the day and love the convenience of reaching into the freezer for your toddlers lunch? Relatable. Making your toddler's favorite foods at home is way easier than you'd think.
Step 1: Collect all the veggies in your fridge that you bought with good intentions and now are days away from their demise - I'm looking at you, spinach. I also had a bag of brussel sprouts in the freezer that had gotten a little too cold.
Step 2: Finely dice or throw those veggies into the food processor.
Step 3: Mix the veggie mix with your protein - I swapped chicken for turkey in this batch.
Step 4: Prepare your breading as you please! I use seasoned gluten free breadcrumbs - today they are premade, but I'd typically make them myself. Quinoa added for extra nutrition!
Step 5: Make small, golf ball sized "nuggets" and coat in your breading. Place onto oiled baking sheets.
Step 6: Bake at 375° for 15-20 minutes.
Step 7: Cool & freeze for convenience!
The whole process (cooking included) usually takes me 30-40 minutes dependant on batch size.
