Coffee Cake Cookies 🤎
* 2 sticks unsalted butter, softened
* 1 cup light brown sugar
* 1/4 cup white granulated sugar
* 2 large eggs
* 2 1/2 tsp vanilla extract
* 2 1/2 cups all purpose flour
* 1/2 tsp baking powder
* 1/2 tsp baking soda
* 1/2 tsp salt
* 1/2 tbsp cinnamon
Streusel/Crumble
* 1/2 cup all purpose flour
* 1/2 cup light brown sugar
* 1/2 tsp salt
* 2 tsp cinnamon
* 1/4 cup butter, melted and cooled (not hot)
Bake Temperature: 350F
Bake Time: 12-14 minutes
# of cookies: 9 jumbo cookies
1. Preheat oven to 350F.
2. Add your flour, baking powder, baking soda, cinnamon, and salt to a bowl and mix. Set aside.
3. Add your softened butter, brown sugar, and white sugar to a bowl. Cream together for 3-4 minutes.
4. Add your eggs and vanilla extract. Mix.
5. Sift or add your flour into your wet ingredients.
6. Fold to mix your wet and dry ingredients together until fully combined.
7. Now line a baking sheet or two with parchment paper.
8. In a bowl, start making your streusel topping.
9. Add flour, brown sugar, cinnamon, salt, and melted butter to a bowl and crumble with a fork until everything is mixed together.
10. Using a jumbo cookie scoop, scoop your dough and roll into balls.
11. Place your dough balls on a baking sheet.
12. Using the your hand or the back of your cookie scoop, press an indent into the middle of each cookie.
13. Add your crumble to the middle of your cookies.
14. Bake @350F for 12-14 minutes.
15. While that’s baking, make your drizzle by adding 1/3 cup powdered sugar, 1 tbsp milk, and a splash of vanilla extract to a bowl and mix.
16. Take cookies out and let cool for about 10 minutes.
17. Once cooled, drizzle your icing on top.
