Pumpkin Snickerdoodle Muffins
Muffins
* 1-15oz can pumpkin puree
* 3/4 cup white granulated sugar
* 1/2 cup light brown sugar
* 1/4 cup milk
* 2 large eggs
* 1/2 tbsp vanilla extract
* 1 3/4 cup all purpose flour
* 1 tsp baking soda
* 1 tsp sea salt
* 1 tsp pumpkin spice
Snickerdoodle Topping
* 1 tbsp cinnamon
* 1/3 cup white granulated sugar
Bake Temperature: 375 F
Bake Time: 23-25 minutes
Yields: 12 muffins
1. Preheat oven to 375F.
2. Add flour, baking soda, and salt to a bowl and mix. Set aside.
3. Add melted butter, white sugar, and brown sugar to a bowl and cream/mix together for 1-2 minutes.
4. Add your whole can of pumpkin puree. Mix into butter and sugars.
5. Add eggs and vanilla extract. Mix in.
6. Add milk and mix until combined.
7. Now combine your wet and dry ingredients together plus your 1 teaspoon of pumpkin spice as well.
8. Mix until combined.
9. In a small bowl, mix your cinnamon sugar together by adding your sugar and cinnamon.
10. Line a cupcake pan with cupcake liners.
11. Scoop your muffin batter into each liner. (About halfway)
12. Pour 1 tbsp of cinnamon sugar on top of each muffin.
13. Bake at 375F for 23-25 minutes until knife or toothpick comes out clean.
14. Let cool for 10-15 minutes before diving in or if you can’t wait … enjoy warm 😮💨🍂
