Homemade Cinnamon Roll Bites 🤎

Dough

* 2 cups all purpose flour

* 1 tbsp baking powder

* 1/2 tsp salt

* 1/2 cup (1 stick) cold butter, chopped

* 3/4 - 1 cup cold milk

Cinnamon Sugar Coating

* 1/2 tbsp brown sugar

* 4 tbsp white granulated sugar

* 1/2 tbsp cinnamon

* 1/2 cup butter, melted to toss

Glaze:

* 2/3 cups powdered sugar

* 2 tbsp milk

* 1/4 tsp vanilla extract

Bake Temperature: 350F

Bake Time: 22-25 minutes until golden brown and bubbly

Pan: 10 inch pie pan

1. Preheat oven to 350F.

2. In a bowl, add your flour, baking powder, and salt. Whisk together until everything is combined.

3. Add your chopped butter.

4. Massage into flour mixture to break up butter. Do this until butter is blended into flour. Be sure to not overly massage butter into flour because it will melt. This is basically a biscuit dough.

5. Start adding your milk, you can use your hands, a stand mixer with a hook, or what I used a hand kneader.

6. Knead until your dough comes together. If your dough is too dry, add a little more milk. If it is too wet add some more flour until it comes together.

7. You can place your dough on a lightly floured surface. Start making 1 inch dough balls and roll them into your cinnamon roll bites.

8. You can either pray your pan heavily with nonstick spray or line with parchment paper. Set aside.

9. Melt your 1/2 of butter.

10. In a bowl, add your brown sugar, white sugar, and cinnamon. Whisk together.

11. Toss each dough ball into butter then toss into cinnamon sugar mix to coat. Repeat this to all dough balls.

12. Place each cinnamon roll bite into your pan.

13. Pour your extra melted butter on top of your bites.

14. Place in oven heated to 350F and bake for 22-25 minutes until bites are golden brown on top.

15. Take out of oven. Start making your glaze.

16. Add your powdered sugar, milk, and vanilla extract to a bowl and mix.

17. Pour your glaze on top of your cinnamon roll bites.

... Read moreOkay, so who else loves those little cinnamon bites you can grab from fast food places, but wishes they tasted a bit more... homemade? That was me! I've been on a mission to create the ultimate homemade cinnamon roll bites, and let me tell you, this recipe is a total game-changer. Forget those sometimes-dry, overly sweet versions; these are fresh, tender, and packed with flavor, making them way better than anything store-bought. Making Homemade Cinnamon Roll Bites from scratch might sound intimidating, but it's actually surprisingly easy and incredibly rewarding. The best part? You control all the ingredients, so you can adjust the sweetness or add your own twist. I love knowing exactly what goes into my treats, especially when they're this delicious! My Top Tips for Making Perfect Bites Every Time: Cold Butter is Your Best Friend: Just like with biscuits, using really cold butter and not overworking the dough is crucial for that tender, flaky texture. I actually cube my butter and then pop it back in the freezer for 10 minutes before I start. It makes a noticeable difference! Don't Over-Knead: This isn't a bread dough that needs a lot of gluten development. You just want the ingredients to come together. Over-kneading can make your bites tough instead of soft and fluffy. Get That Coating On: When you’re tossing the dough balls in melted butter and then the cinnamon sugar mix, make sure every single surface is coated. This is where all that glorious flavor and slightly crispy exterior comes from. Don’t be shy with the butter – it helps the sugar stick! Watch Your Oven: Ovens can vary, so keep an eye on your bites. They should be golden brown and bubbly. If they look like they’re browning too fast, you can loosely tent them with foil. Don't overbake, or they'll lose their melt-in-your-mouth tenderness. Glaze Consistency: The glaze is key for that extra burst of sweetness. If your glaze is too thick, add a tiny bit more milk; if it's too thin, a spoonful more powdered sugar will do the trick. You want it to be pourable but still opaque enough to coat the bites nicely. Make Them Your Own: Fun Variations to Try! Once you've mastered the basic Homemade Cinnamon Roll Bites, the possibilities are endless! Here are a few ideas I've tried: Chocolate Chip Swirl: Mix in a quarter cup of mini chocolate chips into the dough before forming the balls. The melting chocolate is divine! Nutty Bites: Add finely chopped pecans or walnuts to your cinnamon sugar coating for an extra crunch and depth of flavor. Cream Cheese Glaze: Instead of a simple milk glaze, whip up a quick cream cheese glaze (2 oz softened cream cheese, 1 cup powdered sugar, 1-2 tbsp milk, 1/2 tsp vanilla) for a classic cinnamon roll taste. Apple Pie Spice: Swap out some of the cinnamon for a pinch of nutmeg and allspice in your coating for a warmer, autumnal flavor. These Homemade Cinnamon Roll Bites are perfect for a special Sunday brunch, a quick weekday breakfast treat, or even a delightful dessert after dinner. They're so versatile and always a crowd-pleaser. Trust me, once you make these, you won't go back to the store-bought versions!
