* 1 1/2 cup powdered sugar
* 2 tbsp milk
* 1-2 tsp lemon juice
* 1/2 tsp vanilla extract
Bake Temperature: 475F
Bake Time: 22-25 minutes until golden brown on top
1. Preheat oven to 475F.
2. Add flour, baking powder, sugar, and salt to a bowl and mix.
3. Grate your frozen butter into your flour.
4. Massage butter into flour to coat for about 1-2 minutes or you can use a pastry cutter.
5. Now add your buttermilk. Using a spatula or hand kneader, mix until a shaggy looking dough forms.
6. Dust your flat surface with flour so dough does not stick.
7. Work your biscuit dough until your dough comes together. Dust more flour on dough if needed.
8. Flatten and roll dough into a square about 2 inches thick.
9. Wash your pound of blueberries and pat them dry.
10. Place 1/2 of the blueberries on dough and press down a bit.
11. Fold over dough and roll out again.
12. Now add the rest of your blueberries and repeat. Form your dough square, it should be about 2 inches thick.
13. Take a circle cup, circle cookie cutter, or biscuit cutter and make your biscuits. Do not twist or biscuits will not rise. This will make you about 8-9 biscuits.
14. Melt about 4 tbsp butter. Brush a little bit on the bottom of your pan.
15. Place biscuits in pan. Brush some of the butter on top of biscuits. This will help you get those golden brown tops on the biscuits.
16. Bake at 475F for 22-25 minutes until golden brown on top.
17. Once out of oven brush the rest of your melted butter on top.
18. To make your frosting, add powdered sugar, milk, lemon juice, and vanilla extract to a bowl and mix.

Making your own Copycat Bo Berry Biscuits at home is such a rewarding experience, and honestly, once you try this recipe, you might find yourself skipping the drive-thru altogether! While the recipe covers all the essentials, I've picked up a few extra tips and tricks that really elevate these homemade treats to perfection. First off, let's talk about the butter. The recipe calls for frozen butter, and grating it is a game-changer. This ensures tiny, even pieces of cold butter are distributed throughout the flour, which creates those amazing flaky layers in your biscuits. Don't skip the step of massaging it into the flour for just a minute or two – you want the flour to be coated, but try not to overwork it. The less you handle the dough, the more tender your biscuits will be. Warm hands can melt the butter too quickly, so work efficiently! When it comes to adding the buttermilk, a shaggy dough is exactly what you're looking for. It might seem a bit rough, but that's perfect. Over-mixing develops gluten, which can lead to tough biscuits. Just mix until it barely comes together. And that flattening and folding technique for the blueberries? Genius! It helps distribute them without crushing them into a purple mess, ensuring you get those juicy blueberry bursts in every bite. If you're feeling adventurous, a little lemon zest in the dough itself can really brighten up the blueberry flavor. Now, for cutting your biscuits: please, please, please, do not twist the biscuit cutter! Twisting seals the edges of the biscuit, preventing it from rising tall and fluffy. A straight down-and-up motion is all you need. You'll thank me later when you see those beautiful layers! Once they're out of the oven, don't forget that final brush of melted butter. It adds a lovely richness and helps the icing adhere beautifully. Speaking of icing, if you want to experiment, try adding a tiny pinch of salt to balance the sweetness, or even a different extract like almond for a subtle twist. The key is to drizzle it while the biscuits are still warm, but not hot, so it melts slightly and adheres without disappearing. Storing these copycat Bo Berry Biscuits is pretty straightforward. Keep them in an airtight container at room temperature for a day or two, but honestly, they're best enjoyed fresh. If you have leftovers, a quick zap in the microwave for 10-15 seconds or a few minutes in a toaster oven will bring them back to life, almost like they just came out of the oven. Imagine these with your morning coffee or as a sweet treat after dinner – pure bliss! Enjoy making these delightful treats; they're truly a taste of home.
