Oxtail & Sweet Plantain Hot Pockets

INGREDIENTS

- 2-3 lbs oxtail

- Garlic powder, onion powder, black pepper, paprika

- 1 tbsp brown sugar

- 2 tsp browning

- 2 tbsp sofrito (green seasoning)

- 2 tbsp ketchup

- 1 tbsp soy sauce or Worcestershire

- 1 tbsp thyme

- tbsp minced garlic

- ½ onion (diced)

- ½ cup tomatoes

- 2 bay leaves

- 2 sweet plantains (fried)

- ½ cup shredded cheese

- 1 puff pastry sheet

- 1 egg (for egg wash)

- Oil & Water

DIRECTIONS

1. Season oxtail with all dry & wet ingredients.

2. Sear both sides in oil for 5 mins.

3. Add water to cover & bay leaves. Cook 2½ hrs, stir occasionally.

4. Fry plantains while oxtail simmers.

5. Cut pastry, layer plantains, cheese, and oxtail.

6. Top, seal edges, cut slits, egg wash.

7. Bake 375°F until golden about 20–25 mins.
