Crockpot salsa chicken recipe- EASY meal prep
This Crockpot Salsa Chicken with cheese requires only 3 ingredients. It’s embarrassingly easy to make, full of flavor and so delicious!
Ingredients
2 pounds chicken breasts boneless, skinless (about 4)
2 cups salsa mild
1 cup Mexican Blend cheese shredded
Instructions
Prepare chicken: Place whole chicken breasts in your crockpot then pour the salsa over each breast.
Cook: Cook anywhere from 1½ to 2 hours on high or 4 hours on low, you don't want to cook it longer because it will start falling apart.
Preheat your oven to 425℉.
Add Cheese: Transfer the chicken to a 9x13 inch baking dish. Spoon some of the leftover salsa over the chicken. Sprinkle each breast with cheese, about 1/4 cup of cheese for each breast.
Bake: Place the baking dish in the oven and bake for 15 minutes or until the cheese is golden brown and is bubbling.

Okay, so you've whipped up that incredibly easy crockpot salsa chicken (seriously, those 3 ingredients are magic!). Now, let's talk about taking it up a notch, especially if you're like me and always looking for ways to make meals both delicious AND healthy, perfect for those meal prep bowls. I've found a few tricks that truly elevate this dish and make it a staple in my weekly rotation. First, let's address the 'healthy' aspect. While the recipe is already pretty lean, you can make it even better. I personally always go for boneless, skinless chicken breasts to minimize fat, but chicken thighs work too if you prefer a richer flavor. When it comes to salsa, look for low-sodium or fresh varieties. Some jarred salsas can be surprisingly high in salt and sugar, so a quick check of the label makes a difference. And for the cheese – while that golden-brown melted cheese is absolutely divine, you can opt for a reduced-fat Mexican blend, or even sprinkle on some cotija cheese after baking for a salty kick with less overall fat. I often find that a little fresh garnish like a sprinkle of fresh green parsley (just like in the pictures!) or cilantro can add so much flavor that you don't even miss extra cheese. Now, for turning this into the ultimate 'salsa chicken bowl.' This is where the magic of meal prep truly shines! I love versatility, and this chicken is the perfect base. Here are my go-to healthy bowl combinations: Grain Bowls: My absolute favorite is serving this tender, shreddable chicken over a bed of fluffy brown rice or quinoa. It adds fiber and makes it incredibly satisfying. For a lower-carb option, cauliflower rice is fantastic – it soaks up all that savory red salsa goodness beautifully. Salad Bowls: For a super light lunch, I'll shred the chicken and serve it over a crisp bed of romaine lettuce or mixed greens. Add some chopped bell peppers, corn, black beans, and a squeeze of lime juice for a vibrant, refreshing meal. Low-Carb Power Bowls: Sometimes I skip the grains entirely and pair the chicken with roasted veggies like bell peppers and onions, or even some steamed broccoli. A dollop of plain Greek yogurt instead of sour cream adds a creamy, tangy element that's surprisingly delicious and boosts protein. For toppings, don't hold back! This is where you can really customize your healthy bowl. Think diced avocado or a scoop of homemade guacamole for healthy fats, more fresh red salsa, a sprinkle of fresh cilantro, a squeeze of fresh lime juice, or even some pickled jalapeños for a spicy kick. I also love adding a spoonful of black beans and corn to my bowls for extra fiber and nutrients. When I'm meal prepping, I usually cook a big batch of chicken, then store it separately from my grains and veggies. This keeps everything fresh. Then, each morning, I just assemble my bowl in a container, ready to grab and go. It takes minutes and ensures I have a healthy, homemade lunch waiting for me, preventing those unhealthy takeout temptations. Trust me, once you start incorporating this healthy crockpot salsa chicken into your meal prep, you'll wonder how you ever managed without it!
