• 1 1/2 cups chickpeas, drained and dried

• 1 cup cherry tomatoes, cubed

• 1 cup cucumber, cubed

• 1/4 cup feta cheese, crumbled

• 1/2 cup chopped parsley, stems removed

• Handful of spring mix

• Fresh cilantro to taste

Dressing:

• Freshly squeezed juice from less than half a lemon

• 1 teaspoon Dijon mustard

• Salt and pepper to taste
