Ingredients:

2 large cucumbers, thinly sliced

3 medium tomatoes, cut into wedges

1/2 red onion, thinly sliced

1/4 cup olive oil

2 tablespoons red wine vinegar

1/2 teaspoon dried oregano

Salt and freshly ground black pepper, to taste

1/4 cup fresh parsley, chopped

Optional: crumbled feta cheese and olives

Instructions:

Prepare the Vegetables:

In a large salad bowl, combine sliced cucumbers, tomato wedges, and thinly sliced red onion.

Mix the Dressing:

In a small bowl, whisk together olive oil, red wine vinegar, dried oregano, salt, and black pepper until well blended.

Combine and Serve:

Pour the dressing over the vegetables and toss gently to coat.

Sprinkle chopped parsley over the salad. If desired, add crumbled feta cheese and olives for an extra burst of flavor.
